Country Fried Steak (or minute steak as we like to call it) is a family favorite. Pair it with homemade mashed potatoes, gravy from the pan drippings, and a dinner roll and it’s the ultimate comfort food! 
 

Chicken Fried Steak

  • 4 cube steaks

  • 1 cup all purpose flour 

  • 1 tsp pepper

  • 1 tsp salt 

  • ½ tsp baking soda 

  • ½ tsp baking powder

  • 2 eggs 

  • 1 cup milk 

  • Seasoning of your choice, (We love Jim Baldridge’s Secret Seasoning!)

  • 1 cup vegetable oil (or frying oil of choice)

1. Mix flour, pepper, salt, baking soda, and baking powder in a shallow bowl

2. In a separate bowl whisk together the eggs and milk 

3. Heat vegetable oil in an electric skillet to 350 degrees or on the stovetop in a heavy skillet over medium-high heat. You may need more or less oil depending on the size of skillet you use, but just enough to shallow fry, not deep fry. I use a 12”x15” electric skillet and 1 cup is perfect.

4. Pat cube steaks dry with a paper towel and sprinkle with your seasoning of choice

5. Dredge cube steak in the flour mixture, shake off excess, dredge in the milk-egg mixture letting excess drip off, and then once again in the flour mixture making sure that the entire steak is coated

6. Place steaks into hot oil and fry for 10 minutes on each side or until golden brown. It is important to only flip them once or the breading will fall off! 

7. Remove steaks from skillet and enjoy!
