Think of the boxed Hamburger Helper, but make it healthy! Enjoy a healthy and homemade version with this simple and easy to make recipe:
The Easiest Healthy Hamburger Helper
1 lb High Ridge ground beef
1/4 cup Ketchup
1 tsp mustard
1 tsp Garlic powder
1 tsp onion powder
1 tsp salt
¼ tsp pepper
1½ cups pasta
3½ cups beef broth
½ cup Greek yogurt
2 cups cheddar cheese
1. Spray a large skillet with cooking spray. Cook the ground meat in the skillet over medium-high heat until no longer pink, breaking it up as it cooks.
2. Reduce heat to low and add the ketchup, mustard, seasonings, pasta, and broth to the pan and stir well to combine.
3. Cover and simmer for 12-15 minutes until pasta is al dente. (Drain excess liquid at this time.)
4. Turn off heat and stir in the greek yogurt and one cup cheese until combined. Top with the rest of the cheese and place the pan under the oven’s broiler for 1-3 minutes, or until cheese is melted on top. (You could also pour everything into a baking dish, top with cheese, and broil if you prefer to serve in a baking dish). Enjoy!
