Hearty Vegetable Beef Soup

1 pound High Ridge Beef ground beef

1 tsp onion powder

1 onion

1 (10 oz) bag of cauliflower rice/rice/or 2 medium potatoes, diced

2 zucchini

1 cup celery

1 cup carrots

1 can diced tomatoes

1 can crushed tomatoes

1 cup water

1 tbsp balsamic vinegar or apple cider vinegar

½ tsp salt

½ tsp pepper

1. Cook ground beef until browned, breaking it up as it cooks.

2. Chop onion, zucchini, celery, and carrots.

3. Spray crockpot with cooking spray and add everything, stirring to combine. Turn heat to high and cook for 4-6 hours on high or 8-12 hours on low (or until the veggies are fork tender).Top with fresh parmesan cheese if desired.
