Mexican Tater Tot Casserole

1 lb High Ridge Beef ground beef

1 TBSP minced onion

1 tsp garlic powder

1 package taco seasoning

1 can corn, drained

2 oz can diced jalapenos

4 oz can diced green chilis

1 can pinto or black beans, drained and rinsed

1 package microwave Mexican style or Spanish rice, cooked

16 oz shredded Mexican blend cheese

1 can red enchilada sauce--we recommend medium heat but choose mild or hot by your liking

1 bag tater tots

1. Brown hamburger with onion and garlic. Once fully cooked add taco seasoning by direction on back of package.

2. Add in corn, jalapenos, green chilis, beans, rice, and ¾ of the cheese. Cook until cheese is melted.

3. Pour ⅓ of the enchilada sauce into a greased 9x13 pan. Add meat mixture, top with tater tots, and then pour the rest of the enchilada sauce over tater tots.

4. Bake at 375 degrees for 35 minutes. Top with remaining cheese and bake another 5 minutes or until cheese is melted.
