Mexican Beef and Rice Casserole

1 lb High Ridge Beef ground beef

1 ½ cups shredded cheese

1 tsp cumin

½ tsp chili powder

½ tsp garlic powder

1/2 tsp salt

1 cup brown rice (uncooked)

1 can diced tomatoes

1 (16oz) jar salsa

1 cup chicken broth

1. Heat oven to 375 degrees. Spray a 9x13 inch baking pan with cooking spray.

2. In a large skillet cook ground meat over medium high heat, breaking it up as it cooks

3. Turn off heat once meat is cooked through and browned. Add 1/2 cup of the shredded cheese to the skillet along with the remaining ingredients, and mix well.

4. Spoon the meat mixture into the prepared baking dish and cover.

5. Bake 45 minutes, or until rice is tender, then top with the remaining 1 cup of cheese and bake uncovered for 5-10 additional minutes to melt the cheese.
