15 Minute Beef and Broccoli
1 package HRB fajita meat, steak, or stew meat
½ cup beef broth
½ cup soy sauce
⅓ cup sweetener of choice such as sugar or stevia
1 tbs oil
1 tsp minced garlic
2 tbs cornstarch
2 tbs water
3 cups broccoli florets
1 ½ cups brown rice
1 tbs toasted sesame seeds (optional)
1. Cook the rice (or cauliflower rice) according to package directions.
2. Steam fresh broccoli in the microwave with 2 cups of water in a covered glass bowl (or in a pot with cover until just tender), then drain excess water. If using frozen, cook per package instructions.
3. In a mason jar or small bowl, combine the beef broth, soy sauce, sweetener, oil, and garlic.
4. Whisk cornstarch with 2 tbs water to make a slurry and add it to the sauce.
5. Cut steak into strips.
6. Heat a skillet over medium high heat. Spray pan with cooking spray, add the steak, and sauté for 1-2 minutes on each side (or until just browned on the outside).
7. Remove from pan and set aside.
8. Pour sauce mixture into the pan. Cook over medium-high heat, allowing sauce to simmer for about 3-5 minutes, or until sauce thickens.
9. Add steak and broccoli to the pan with the sauce, and stir to toss everything together.
10. To serve, place 3/4 cup rice on a plate and top with one portion of the broccoli and beef. Drizzle with any leftover sauce from the pan, add finish with a sprinkle of sesame seeds, if desired.
