Beef and Sweet Potato Burrito Bowl
1 lb of High Ridge Beef ground beef
1 tbs taco seasoning
2 sweet potatoes
1 bell pepper
1 can black beans
1 can corn
1 can diced tomatoes with green chilies
1 can (10 oz) enchilada sauce
1.Brown the hamburger on low and add seasoning.
2. To the same skillet, add diced sweet potatoes, peppers, corn, black beans, and ¼ cup water. Turn heat to medium. Place a lid over and allow to steam until potatoes and peppers are softened.
3. Add enchilada sauce, tomatoes and simmer for a few minutes until everything is cooked. Add cheese as you’d like!
