Beef Enchiladas

1 lb High Ridge Beef hamburger
1 TBSP chopped onion, fresh or dried
2 10oz cans red enchilada sauce (we like medium heat)
1 4.5oz can diced green chiles
2 cups shredded cheddar cheese
8 soft tortilla shells

1. Brown hamburger with the onion in a large skillet.

2. Mix one can of enchilada sauce and the diced green chiles with the browned hamburger.

3. Divide the hamburger mixture evenly between 8 shells, sprinkle with 1.5 cups cheese, and fold the shells closed.

4. Place enchiladas in a greased baking dish, pour the other can of enchilada sauce over them, and top with the remaining ½ cup cheese.

5. Bake at 350 degrees for 15-20 minutes.
