Grilling season is upon us! Kabobs are always a favorite because they are a main entree and side dish all in one. Here is one of our favorite summer kabob recipes:
Grilled Hawaiian Beef Kabobs
Marinade:
6 oz pineapple juice
¼ cup soy sauce
¼ cup extra virgin olive oil
¼ cup light brown sugar
¼ cup apple cider vinegar
2 tsp. minced garlic
Kabobs:
1 ½ lbs High Ridge Beef sirloin tip
1 red pepper
½ fresh pineapple or 1 large can of pineapple chunks
1 zucchini
¼ red onion
1. Soak 10 wood skewers in water for a minimum of 30 minutes
2. Combine all the marinade ingredients and reserve ½ cup of marinade for basting
3. Cut beef into 1” pieces and toss in the marinade until fully coated. Cover and marinate at room temperature for 30 minutes. (you can marinate for up to 24 hours, but be sure to refrigerate if over 30 minutes) I marinated for 24 hours and it had great flavor!
4. Prep pineapple and veggies. Cut pepper, onion, and pineapple into 1” pieces and zucchini into ¼-½” thick coins.
5. Preheat grill to high
5. Layer the kabob by alternating ingredients onto wood skewers. The ingredients can be touching, but don’t stack too tightly.
6. Lightly oil the grill grates and cook for 3 minutes per side or until beef is cooked to your preference. Brush the kabobs with reserved marinade once on the grill and every time you turn them.
