Mini Pizza Meatloaf

1 lb. High Ridge Beef ground beef

½ cup onion

1 green pepper

1 (14 oz) can pizza sauce

1 egg

¼ cup parmesan cheese

½ tsp black pepper

½ tsp garlic powder

½ tsp dried basil

½ tsp dried oregano

1 cup shredded mozzarella

1 package pepperoni slices

1. Finely dice and chop onion and pepper.

2. Heat oven to 375 degrees. Spray a 12 cup muffin tin well with cooking spray.

3. Place 1/4 cup pizza sauce, and everything else for the meatloaves, (except for the ground beef) in a large bowl, and stir to combine.

4. Add HRB ground beef and use hands to combine mixture thoroughly.

5. Divide mixture among 12 muffin tins. Spread the remaining 1 cup sauce evenly over each meatloaf, followed by pepperonis and shredded cheese.

6. Cook for 35-40 minutes until meat is cooked through.
